KareKare

Every time there's a potluck party here in our place, there's always someone who brings KareKare. Karekare is a Philippine Stew, made from peanut sauce with a variety of vegetables, oxtail or beef and occasionally trip. Today I decided to cook Karekare and I just followed the simple instructions at the back of Pamana Pang Kare KAre Mix ( Stew Based Mix) and I just add
And it turns out good.
Here's the recipe if you want to try it too:


Kare Kare

Ingredients:
2 lbs oxtail ( cut into pieces)
1 1/2 cups of sliced eggplant
1 1/2 cups long beans ( cut into 2" lengths)
1 cup Chinese cabbage sliced
3/4 cup peanut butter ( I used chunky reduced fat )
1 lb tripe

Procedure:

1.Peanut Sauce: In a medium size bowl add 1 cup of water, stir one package of Karekare mix, 3/4 cup peanut butter. Mix well, set aside.
2. Cooked oxtail in 5 cups of water until meat is tender in medium heat. I cook the tripe separately and then when it's soft I transfer it in the pot of oxtail excluding the water.
3. Stir in peanut sauce. Add eggplant, long beans and cook for two minutes.
4. Add Chinese Cabbage , add salt to taste. Serve with sauteed shrimp paste.


I'm so happy with the outcome. When I about to taste a bowl of it I realized that I don't have steamed rice :-). Kare kare is good with steamed rice. Happy eating.
